Kevin Danet steps up as the hotel’s new Director of Food and Beverage, while international culinary heavyweight Liam Nealon joins as Director of Culinary. Together, this powerhouse duo brings over three decades of collective experience, combining seamless French hospitality with a soulful, ingredient-first approach to dining.

Deep Roots and Soulful Service

Having spent more than a decade navigating Vietnam's vibrant hospitality sector—including nearly two years as Assistant Director of F&B right here at the Metropole—Kevin Danet understands the soul of the city as few expatriates do. He now assumes responsibility for all eight of the hotel’s celebrated food and drink venues, including the legendary modern French fine dining sanctuary, Le Beaulieu.

Rather than relying solely on grand heritage, Danet believes the true luxury lies in emotional resonance and authentic human connections.

“Beautiful venues and exceptional cuisine are important, but what guests remember most is how we made them feel,” notes Danet.

His vision ensures that whether guests are sipping morning espresso under the colonial awnings or indulging in multi-course tasting menus, every touchpoint feels distinctly personal, warm, and memorable.

Respect for Ingredients, Passion for Craft

Complementing Danet’s operational vision is Liam Nealon, whose appointment as Director of Culinary marks an exciting creative pivot for the property. Nealon arrives in Hanoi with 25 years of global kitchen expertise spanning Australia, Europe, and key Asian culinary epicenters—most recently coming off an acclaimed tenure at the Four Seasons Resort Bali.

Nealon’s philosophy pivots around absolute respect for high-quality produce and allowing natural, unforced flavors to shine. Yet, his ambition extends far beyond the kitchen counter.

“I am particularly passionate about collaborating closely with service teams to foster meaningful guest connections and memorable moments,” says Nealon.

By breaking down the traditional divide between back-of-house culinary craft and front-of-house service, Nealon aims to build immersive, dynamic dining environments where storytelling happens seamlessly across every table.
