Exclusive Eight-Seat Pop-Up Redefines Coastal Fine Dining at The Anam Mui Ne

Mui Ne's culinary landscape just gained a high-stakes addition for serious food enthusiasts. The Anam Mui Ne has unveiled an ultra-exclusive fine-dining pop-up inside The Indochine Restaurant, creating a rare setup that seats up to eight guests per evening across just four tables.

Staged every Tuesday and Thursday from 6:00 PM to 10:00 PM, the concept occupies a private space adjoining the restaurant's outdoor terrace. Chef Le Huu Nghia leads the kitchen, using the limited capacity to present ambitious, highly experimental cooking that elevates classic resort dining into a personal gastronomic affair.

Chef Nghia has designed two rotating five-course tasting menus that marry precise European techniques with bold Asian influences, accompanied by optional curated wine pairings.

• Tuesday Menu Highlights: The progression starts with a crispy nori tart filled with salmon belly tartare, salmon roe, and wasabi mayonnaise, followed by chargrilled abalone paired with homemade oyster sauce and pickled kombu. Diners then move through a delicate daisy soup with bonito broth, pan-seared foie gras accompanied by fig and apple purée, and a centerpiece grilled filet mignon served with red wine sauce, carrot purée, and baby broccoli.

• Thursday Menu Highlights: The menu opens with a shrimp-wrapped scallop topped with caviar and coriander aioli, alongside a beef filet mignon tartare elevated by ginger jam. The evening's standout is Chef Nghia’s signature foie gras phở consommé enriched with shiitake mushrooms and truffle oil, followed by chargrilled hamachi crudo, pan-seared turbot with lotus-seed purée and ikura, and a strawberry mille-feuille featuring goat's cheese mousse for dessert.

By keeping seats strictly limited, the resort emphasizes direct connection and bespoke service over volume, offering an atmosphere that feels more like an invitation to a private chef's table than a standard night out.
